Pastas
The menu at Pompeii Restaurant features a variety of Appetizers, Salads, Pasta Sauces & Pastas, Specialty Pastas, Seafood and Meats. In addition you will find a Chef's Features board with specially prepared dishes for the evening. These include steaks, lamb, veal, specialty ravioli, special salads and more.

All preparations follow traditional Italian recipes with few adjustments. When a particular product is not available we make adjustments following the advice of real Italian cooks. We don't like to refer to our food as "Authentic Italian" as we are not in Italy and therefore not every product is available. We like to view it as "Authentic Italian-American" where the recipes have been revised by Italians who came to the US and finding the bounty of the markets and with increased income they were able to prepare a grander style of food.

A good example of this is Ragu or Neapolitan Meat sauce. This is authentically prepared with the meats and tomatoes cooked together for a long period of time. Then the meat is removed and reserved for another meal while the meat flavored tomato sauce is then used on pasta. In the US many found with meat more available and affordable, Ragu was prepared with the meat remaining in the sauce. In addition we do yield to some demands of the American palate that do not exist in Italy - i.e. Fettucine Alfredo as we know it is not authentic Italian, but we do offer it. The authentic preparation is different and rarely if ever is the term "Alfredo" used in Italy.

In either case the results are the same, wonderful family food for everyone to enjoy!
