Chef Paul's is the only Wine Spectator Award holder in the Hot Springs area. We pride ourselves on having a nationally recognized wine program. Our staff has received and continues to receive training in wine service, food matching and tasting. The list focuses on California but has selections from Oregon, Washington, France, Italy, Germany, Australia, Chile and Argentina at various times. Chef Jeff handles the list and has a penchant for Pinot Noir where you will find a selection of boutique wines carefully selected for their unique charateristics and regional traits.
If you need help in selecting a wine the waitstaff is there to help and can help in narrowing down the selection to fit your taste and budget. With over 200 wines to choose from their is something for everyone!

To help maintain integrity and taste our wines by the glass was maintained with a nitrogen preservation dispenser. We also limit the availability of wines by the glass to insure freshness. The selection changes from month to month with Chardonnnays and Cabernets brought on and off the list to offer variety of styles connected to the seasons and foods of the season.
