Chef Paul's was named after namesake Chef Paul who earned a college degree in Business and worked for various restaurant concepts out of college as well as for his family's restaurant in upstate NY while growing up. He played sports in high school and college being offered a professional baseball opportunity that he turned down due to an injury. His time working with both family and friends in various foodservice businesses including TGI Friday and Serendipity III honed his skills in selecting only the finest ingredients and developing menus built off of classics updated to present desires.

Chef Jeff is Chef Paul's younger brother and also worked in the family restaurant turning his attention to desserts and pastries. Their grandmother who loved to cook lived with them in her later years and Jeff learned alot of the techniques and skills first hand from her. Several recipes from her and her mother are used in the preparation of cakes and pies. Jeff also worked in various restaurant ventures over time, spending almost 12 years in field management with Burger King Corp. in New England and the Carolinas. He heads up the dessert list for all of their ventures as well as developed and manages the Wine list at Chef Paul's and Pompeii.


Dining room staff includes Chris L and Chris S in the Riviera Room - Cindy mixing cocktails - Zack and Tony helping set and clean tables - Cody and Sears in Pompeii's green room - and "Pops" our father can sometimes be found in the bar enjoying dinner!

Kitchen staff includes the brothers and Robin, sous chef - Romie making salads, bread and other goodies - Kristie assisting with baking and Tasha on occasion pitching in as needed.


Chef Paul's was the recipient of many awards both locally and nationally.

Local reader's choice awards from both the Arkansas Times and Sentinel-Record including Best Atmosphere, Best Service, Best Continental Food, Best Wine List, Best Desserts, Best Restaurant and Most Romantic.

Nationally Chef Paul's was recognized by Santé Magazine for their menu and wine program. They also earned a 3-Diamond rating from AAA and held a Wine Spectator Award of Excellence, the only one in the city.
